I found this recipe a few years ago on a message board in a weight loss community. They are low calorie/low fat - but still SO good!

Ingredients For ginger spiced pumpkin muffins

1/2 cpacked brown sugar

1 1/2 cwhole wheat flour

2 tspbaking powder

1 tspcinnamon
-
1 tspginger
-
1/2 tspsalt
-
1egg
-
1 cmilk
-
1/2 ccanned pure pumpkin

1/4 ccanola oil
How To Make ginger spiced pumpkin muffins

1Preheat oven to 375 degrees. Lightly spray muffin cups with nonstick spray.

2In large mixing bowl, stir together brown sugar, flour, baking powder, cinnamon, ginger and salt.

3In small bowl, beat egg for 30 seconds. add milk, pumpkin, oil and zest. Beat well. Add egg mixture to flour mixture and stir until the flour mixture is moistened.

4Fill muffin cups three quarters full with batter. Bake for 15 minutes.
