1tea bag

1/3 cwater

1/2 cdried apples, chopped

1/2 cdried apricots, chopped

1/3 cdried cherries, chopped

1/3 cgolden raisins

1/2 cflour

1/4 tspcinnamon

1/4 tspground ginger

5 Tbspbutter, softened

1/2 cdark brown sugar

2 lgeggs

2 Tbsporange marmalade

1/4 tspalmond extract
-
2/3 cmixed nuts, almonds, walnuts and pecans, coarsley chopped
How To Make fruit and nut bites

1Make tea with boiling water.

2Pour steeped tea over chopped dried fruit. Let sit for 15 minutes.

3Preheat oven to 300 degrees. Line mini-muffin tin with papers.

4Combine flour, cinnamon and ginger in a bowl.

5Beat butter and brown sugar until fluffy.

6Add eggs one at a time. Mix well.

7Add marmalade and almond extract. Mix well.

8Add flour, beat slowly until well combined.

9Drain fruit and fold into batter.
-
10Fold in nuts.

11Fill muffins with 2 tablespoons of batter.

12Bake 15 minutes. Reduce temperature to 275 degrees and rotate pan.

13Bake 15-20 minutes until brown and toothpick comes out clean.

14Cool in pan.
