I loved the strawberry bread at Costco but they stopped selling it,when I found this recipe in the Los Angeles times newspaper,I knew I had to try it. The spread makes the muffins doubly delicious.

Ingredients For fresh strawberry muffins

1 c chopped strawberries

3/4 c plus 1 t. sugar

2 c flour
-
2 t. baking powder

1 t. salt
-
3 eggs
-
1/4 c oil
-
1/2 c milk
-
1 t. grated orange peel
- STRAWBERRY-CREAM CHEESE SPREAD

1/4 c crushed or chopped strawberries

8 oz cream cheese,softened
How To Make fresh strawberry muffins

1Preheat oven to 350 deg. Sprinkle strawberries with 1 T. sugar and let stand. In a large bowl,sift together flour,remaining 3/4 c sugar,baking powder and salt. In smaller bowl,beat eggs until light. Add oil,milk and orange peel Beat until well blended. Add egg mixture to flour mixture. Stir until mixed. Drain chopped berries,reserve juice, and fold into batter. Fill paper-lines cups 2/3 full. Bake 15 minutes or until tests done. Serve warm with spread. Spread: Mix juice from berries,cream cheese and 1/2 crushed strawberries until blended.
