Ingredients For flaxseed-almond meal muffins

  • 1 c
    almond meal
  • 1 c
    flaxseed flour (bob's mills)
  • 1/3 tsp
    baking soda
  • 3
    eggs( i used egg substitute)
  • 1/2 c
    apple juice(sweetened or unsweetened)
  • 3 Tbsp
    brown sugar
  • 1 Tbsp
    unsalted butter (softened)
  • 1/4 c
    honey

How To Make flaxseed-almond meal muffins

    Blend flours and baking soda (by hand) Add the eggs one at a time- mixing well. Add butter, brown sugar, honey. Mix throughly until the consistency of a cupcake batter. Add more apple juice (1 tablespoon at a time, if too thick

    Pour batter into muffin tins (lined with paper cups) half full.

    Bake @ 350 degrees for 20-25 minutes or until toothpick in center comes out clean. Let cool
