This is my mother's recipe and i love them. They are larger than store bought and are a great addition to any breakfast.

Ingredients For english muffins in the bread machine

1 cmilk

3 Tbspbutter
-
1egg
-
1/2 tspsalt
-
2 Tbspsugar

3 call purpose flour (or more)

1 1/2 tspdry yeast

How To Make english muffins in the bread machine

1Put ingredients in the machine in the order listed according to the manufacturer, except the cornmeal.

2Start up the dough cycle.

3When the cycle is finished, sprinkle corn meal over your work area.

4Divide dough into eight equal piece and pat each piece into a 1/2" thick round.

5Then, turn each round in dish of cornmeal.

6Place the rounds on a baking sheet, cover and let rise for 20-30 minutes -- until not quite double.

7Heat a dry cast iron skillet or griddle over a low flame.

8Spray skillet with oil, then cook muffins about 5 - 7 minutes on each side. They should be golden brown when you turn them.

9Split the muffins with a fork or serrated knife and serve warm. (They also freeze well and can be toasted or reheated in the microwave.)
