Ingredients For easy java muffins

  • 1/4 c
    (1/2 stick) butter, softened
  • 1 c
    packed brown sugar
  • 2
    eggs
  • 1/4 c
    unsweetened applesauce
  • 1/2 c
    buttermilk
  • 1/2 c
    strong brewed coffee
  • 1 Tbsp
    instant coffee granules
  • 1/2 tsp
    vanilla extract
  • 1 c
    all purpose flour
  • 3/4 c
    whole wheat flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    ground cinnamon
  • 1/4 tsp
    salt
  • 1/2 c
    finely chopped pecans, divided

How To Make easy java muffins

    In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs; mix well. Beat in applesauce.

    In a small bowl, whisk buttermilk, coffee, coffee granules and vanilla until granules are dissolved; gradually add to butter mixture.

    In another bowl, whisk the flours, baking powder, baking soda, cinnamon and salt. Add to the butter mixture; stir just until moistened. Fold in 1/4 cup of the pecans.

    Coat muffin cups with cooking spray; fill three-fourths full. Sprinkle with remaining pecans.

    Bake in a preheated 375-degree oven for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
