1/4 c(1/2 stick) butter, softened

1 cpacked brown sugar

1/4 cunsweetened applesauce

1/2 cbuttermilk

1/2 cstrong brewed coffee

1 Tbspinstant coffee granules

1/2 tspvanilla extract

1 call purpose flour
-
3/4 cwhole wheat flour

1 1/2 tspbaking powder

1/2 tspbaking soda

1/2 tspground cinnamon

1/4 tspsalt

1/2 cfinely chopped pecans, divided
How To Make easy java muffins

1In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs; mix well. Beat in applesauce.

2In a small bowl, whisk buttermilk, coffee, coffee granules and vanilla until granules are dissolved; gradually add to butter mixture.

3In another bowl, whisk the flours, baking powder, baking soda, cinnamon and salt. Add to the butter mixture; stir just until moistened. Fold in 1/4 cup of the pecans.

4Coat muffin cups with cooking spray; fill three-fourths full. Sprinkle with remaining pecans.

5Bake in a preheated 375-degree oven for 15-20 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
