dee's healthier carrot apple muffins
In my quest to make healthier breakfasts that my family can grab n go...healthy muffins are the perfect answer. I can get alot of nutrition into them without it being detected. Now, instead of grabbing a high calorie, sugar, and fat, low nitrition granola bar, they grab 1 or 2 of these and a banana on the way out the door. They love them, and I feel good that they are eating a healthy breakfast. This is the newest version that I have made. Don't be intimidated by the long ingredient list. They really do go together pretty quickly. Enjoy! The flours in these are flexible, use what suits you.

Ingredients For dee's healthier carrot apple muffins
- WET INGREDIENTS

3/4 cplain greek yogurt

1/2 ccoconut oil
-
1/4 cpure maple syrup
-
1/4 cagave syrup or necter (use 1/4 c more maple syrup if unavailable)

1/4 cgranulated honey (or stevia in the raw if unavailable)

2eggs, room temp

2 tspvanilla extract

1 tspbutter flavoring
-
1/2 lbvery finely chopped carrots, a 1/2 sm bag or 3 medium

2apples, peeled and chopped in small pieces
- DRY INGREDIENTS

1/2 ccoconut flour
-
1/2 calmond flour
-
1/2 ctapioca flour
-
1/2 cgluten free flour, or ww pastry flour(if not making them gluten free)

2/3 cquick oats
-
1/3 cground flax seed, about 1/4 c b4 grinding

1 1/2 tspbaking powder
-
1 1/2 tspbaking soda

1 tspsea salt
-
2 tspapple pie spice, or equivilent

1 tspcinnamon
-
1/2 tspeach of ground ginger and nutmeg

2/3 cdry fruit ie: raisins, craisins, or even dark chocolate chips
- STREUSEL TOPPING

2 Tbspeach of coconut oil(or butter), brown sugar, any flour, & ground flax seed

1/4 ceach of quick oats and sliced almonds

1 Tbspeach of sesame, sunflower, or pumpkin seeds (optional)

1/2 tspapple pie spice & a dash of sea salt
How To Make dee's healthier carrot apple muffins

1I use the food processor with the chopping blade to prepare the carrots and apples. Chop until carrots are very finely chopped. remove from FP bowl and set aside. Chop apples to about 1/2 inch dice and set aside. Grind flax seed. Mix streusel topping and set aside. Measure out all dry ingredients, mix well and set aside.

2Preheat oven to 375 degrees. Cream all wet ingredients in mixer bowl. Make sure eggs and yogurt are not ice cold from the fridge, so they don't solidify the coconut oil. Mix in the dry ingredients just until combined. Fold in dry fruit, nuts, or ?.

3Scoop the batter into lined muffin tins almost 3/4 full. Top with streusel mixture. Bake for about 25 minutes or until light brown. Enjoy!
