I've made this recipe for years and I'm always asked for the recipe. It's very moist and a different version then most Banana Breads I've had. Definately a family favorite.

Ingredients For dawne's banana bread

  • 3 c
    all purpose flour
  • 2 c
    sugar
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 tsp
    baking soda
  • 3 lg
    eggs
  • 1 c
    oil
  • 2/3 c
    water
  • 1 1/2 tsp
    vanilla extract
  • 1 c
    chopped nuts (optional)
  • 3 - 4
    ripe bananas
  • 15 oz can
    crushed pineapple with juice (optional read note)

How To Make dawne's banana bread

    Preheat your oven to 350 degrees. Grease a tube pan or 2 loaf pans and set aside.

    In a large bowl add all dry ingredients. Wisk to blend together. Start adding eggs, oil, water and vanilla. Stir to blend. (If using the pineapple omit the water. Use all the juice from the pineapple also)

    Cut your banana lengthwise in quarters then cut into 1/2 inch cubes. This is important, DO NOT MASH. Fold gently with nuts (if used) into batter.

    Pour into greased pans and place in center of a heated oven. Cook between 1 hr - 1 hour 15 min. Test with a toothpick but be careful you don't stab a banana. When toothpick is clean remove from oven and place on a cooling rack for about a 1/2 hour. Enjoy.
