These amazing little muffins come from a Tuscaloosa resturant! This recipe makes a TON but they do freeze well and the batter can stay in the fridge for a month.

1 box15oz box of raisin bran cereal

5 call purpose flour

5 tspbaking soda

2 tspsalt

4eggs

1 cvegetable oil

1 qtbuttermilk

2 tspvanilla

1 tspground cinnamon

How To Make cypress inn muffins

1Preheat oven to 400 degrees. Mix dry ingredients in large bowl and then stir in remaining ingredients. Mix well. Fill MINI muffin tins 2/3 full and bake for 15 minutes.

2The batter will last about a month in the refrigerator. I'm sure they could be made in large muffin tins, but I've never tried.
