1 3/4 call-purpose flour

1/3 clight brown sugar

3 tspbaking powder

1/4 tspsalt

1/2 cchopped pecans

2 Tbspinstant coffee

1/2 cunsalted butter, melted

How To Make coffee muffins with sugared-pecan topping

1Preheat the oven to 375 degrees F. Combine flour, brown sugar, baking powder, salt, and pecans in a large mixing bowl.

2In a separate bowl, combine the egg, milk, instant coffee, and vanilla. Whisk well to dissolve the coffee.

3To the dry mixture, add the egg mixture and melted butter. Stir just until moistened - don't over mix.

4Spray a muffin tin and drop the batter in with a scoop. Sprinkle the 1 Tbsp sugar and 2 Tbsp chopped pecans over the top of each muffin.

5Bake muffins at 375 degrees for 18-20 minutes. Allow to cool several minutes and move muffins to a cooling rack.
