This delicious recipe came to me via my neighbor growing up. Ms. Grace was like a grandmother to me and my siblings. I can remember being in Jr. high and going to visit with her when the school day was over. Her house smelled wonderful with the aroma of her muffins cooking. She shared countless recipes with me as I was growing up but this one was always my favorite.

Ingredients For coconut muffins with warm lime glaze
- COCONUT MUFFINS

1egg

1 3/4 cplain flour

1/2 csugar

3 tspbaking powder

1/4 cvegetable oil
-
1 cshredded coconut
-
1 cmilk
- WARM LIME JUICE GLAZE

1/2 cshredded coconut

3/4 cmilk

2 tsplime juice
How To Make coconut muffins with warm lime glaze

1Beat egg till well mixed. Stir in remaining mixing well.

2Spoon into greased muffing tins.

3Bake at 400 degrees for approximately 20 minutes or until toothpick test clean.

4WARM LIME GLAZE - In small sauce pan, bring coconut and milk to a boil over medium heat.

5Turn temperature to low and simmer 5 minutes stirring well.

6Take off of heat and stir in Lime juice. Spoon over warm muffins.

7You can place glaze in refrigerator to use as needed.
