This stuffed corn muffins recipe I created is a style of Clayton sandwich. This is very delicious. It's great serving for a potluck.

Ingredients For clayton corn muffins

8frozen all-white meat chicken nuggets, thawed

3/4 ccreamy French dressing

3banana peppers, sliced

1 pkgcorn muffin mix (8.5 ounce)

2 lgeggs
-
3/4 cmilk
-
1 cshredded monterey jack cheese
How To Make clayton corn muffins

1Preheat oven to 400 degrees F.

2Line the muffin tin with paper baking cups. Spray each cup with cooking spray.

3In a small bowl, combine chicken nuggets, French dressing, and sliced banana peppers; mix well.

4Stir together muffin mix, eggs, milk, and 1/2 cup shredded Monterey Jack cheese in a medium bowl until combined.

5Fill muffin cups halfway with batter.

6Add chicken nuggets mixture to each cup.Top with remaining batter.

7Sprinkle with remaining shredded cheese on top each muffin.

8Bake in the preheated oven until a toothpick inserted into the batter comes out clean; about 20 minutes.
