Ingredients For cinnamon apple muffins

  • CINNAMON APPLES
  • 1 c
    peeled & diced apple(one apple)
  • 1 Tbsp
    butter
  • 2 Tbsp
    brown sugar
  • 1 tsp
    cinnamon
  • MUFFIN BASE
  • 2/3 c
    flour
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    cinnamon
  • 3 Tbsp
    butter, softened
  • 1/4 c
    sugar
  • 1 lg
    egg white
  • 3 Tbsp
    yogurt
  • 1/2 tsp
    vanilla
  • TOPPING
  • 1/4 c
    sugar in the raw

How To Make cinnamon apple muffins

    Cinnamon Apples In a small saucepan, combine apples, butter, brown sugar and cinnamon. Bring to a simmer, cook until apples are softened and sugar is caramelized. Remove from heat and set aside.

    Muffins Preheat oven to 375 degrees. Line muffins tin with liners.

    In bowl whisk together flour, baking soda, and cinnamon.

    Cream together butter and sugar.

    Add egg white, yogurt and vanilla. Mix well.

    Stir in flour until combined.

    Fold in apples so they are evenly distributed throughout the batter.

    Divide the batter among the muffin cups.

    Sprinkle tops with sugar in the raw.

    Bake for 15 to 18 minutes. Cool in pan 10 minutes, transfer to cooling rack.
