Ingredients For chocolate chip-pumpkin muffins

  • 3/4 c
    sugar
  • 1/4 c
    canola oil
  • 2 lg
    eggs
  • 3/4 c
    pumpkin, canned
  • 1/4 c
    water
  • 1 c
    all purpose flour
  • 1/2 c
    whole wheat flour
  • 3/4 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    ground cloves
  • 1/4 tsp
    nutmeg
  • 1/2 tsp
    cinnamon
  • 1 c
    chocolate chips, semisweet

How To Make chocolate chip-pumpkin muffins

    Heat oven to 400. Spray muffin cups w/ cooking spray. In bowl, mix together sugar, oil and eggs. Add pumpkin and water.

    In another bowl, mix together flours, baking powder, baking soda and spices. Add sugar mix to flour mix, mix until combined.

    Stir in chocolate chips. Fill muffin cups w/ batter, 2/3-full. Bake about 20 mins, or until a toothpick inserted in center comes out clean.
