Ingredients For cheese poke muffins

  • 3/4 c
    all-purpose flour
  • 3/4 c
    yellow corn meal
  • 2 tsp
    sugar
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 1
    egg
  • 1/2 c
    plus 2 tablespoons milk
  • 1/3 c
    vegetable oil
  • 1/2 c
    finely chopped cheese (vleveeta)
  • 2 Tbsp
    soften butter

How To Make cheese poke muffins

    In a large bowl combine the flour, cornmeal, sugar, baking powder, and salt.

    In a med. bowl whisk the egg, milk, and oil. stir into the dry ingredients just until moistened.

    greas and flour 8 muffin cups to 1/4 full. combine the cheese and butter, spoon over the batter. top with the remaining batter.

    bake at 400 for 15-18 minutes. or until toothpick comes out clean. cool for 5 minutes before removing from pan to a wire rack. serve warm
