Ingredients For cheese and salami muffins

    eggs
  • 1/2 c
    milk
  • 1/4 c
    olive oil
  • 1 1/2 c
    flour
  • 2 tsp
    baking powder
  • 1 1/2 c
    grated berdorfer cheese (or emmenthal, cheddar or gruyere
  • 3 oz
    salami, finely chopped

How To Make cheese and salami muffins

    Preheat oven to 350 F.

    In a bowl mix the eggs with the olive oil and milk. In a separate bowl, mix the the flour and baking powder with a pinch of salt and pepper. Incorporate flour mixture into the egg mixture.

    Add the grated cheese and the chopped salami to the batter and mix. Grease 9 muffin cups and distribute the batter between the cups. Bake in the preheated oven for 20 minutes.
