Ingredients For cheese and herb muffins

  • 2/3 c
    hungry jack mashed potato flakes
  • 3/4 c
    boiling water
  • 3 Tbsp
    butter ,melted
  • 3/4 c
    milk
  • 1 lg
    egg, slightly beaten
  • 1 c
    yellow corn meal
  • 1 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1 tsp
    dill weed, thyme or rosemary
  • 1/4 tsp
    black pepper
  • 3/4 c
    shredded cheddar cheese, divided

How To Make cheese and herb muffins

    Heat oven to 400* lightly coat 8 muffin tins with cooking spray
  • 2
    Combine water, butter,milk and egg Ina large mixing bowl. Add potato flakes, cornmeal baking powder, salt, pepper and desired seasonings. Mix well, stir in half the cheese
  • 3
    Divide mixture evenly in pan and top with cheese
  • 4
    Bake 20 minutes cool 10 minutes before serving . ENJOY!
