These muffins may be baked ahead & frozen. Simply pop desired number of muffins in microwave or oven to thaw.The spinach keeps them moist.

Ingredients For cheddar spinach muffins

  • 6 Tbsp
    butter or margarine, melted
  • 1
    egg
  • 1 c
    milk
  • 1/2 c
    frozen chopped spinach - thawed, drained, squeezed dry
  • 1 c
    cheddar cheese, shredded
  • 1 1/2 c
    all-purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt

How To Make cheddar spinach muffins

    1.Preheat oven to 350 degrees. Lightly grease 12 cup muffin cups. 2.Mix the flour, baking powder, baking soda and salt together in a mixing bowl.

    3.Stir the melted butter, egg, milk, spinach, and Cheddar cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture. Fill each muffin cup 3/4 full of batter.

    4.Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 35 minutes.
