A cross between carrot cake and oatmeal cookies. An easy way to get my kids to eat their veggies.

Ingredients For carrot oatmeal muffins

1 1/3 call purpose flour
-
1 coats (quick cooking is ok but old fashioned gives you more texture)

1 Tbspbaking powder

1/2 tspbaking soda
-
1 tspcinnamon
-
1/2 cbrown sugar
-
3/4 ccarrots, finely shredded
-
1/2 craisins
-
1/2 cmilk
-
1egg, beaten
-
1/3 cbutter, melted
-
1 tspvanilla extract
How To Make carrot oatmeal muffins

1Spray a 12 cup muffin tin with cooking spray. Preheat oven 375 degrees.

2Combine flour and oats in large bowl.

3Sprinkle with baking powder, baking soda and cinnamon. Mix.

4Stir in brown sugar.

5Add carrots and raisins, mix.

6In seperate bowl milk, egg, butter and vanilla. Stir.

7Add milk mixture to flour mixture and mix thoroughly.

8Fill each muffin cup 3/4 of the way full.

9Bake at 375 degrees for 20 - 25 minutes. Cool 10 minutes then remove from muffin tin.
