Ingredients For carrot applesauce muffins

  • 1 1/2 c
    self rising flour
  • 1 1/4 c
    unsweetened applesauce
  • 1 Tbsp
    honey
  • 1/2 c
    finely shredded carrots
  • TOPPING
  • 1 Tbsp
    sugar
  • 1 1/2 tsp
    cinnamon

How To Make carrot applesauce muffins

    Preheat oven to 350 degrees F. Line a muffin pan with 6 paper liners.

    Combine flour, applesauce and honey in a medium bowl until flour is completely incorporated.

    Fold carrots in until evenly distributed.

    In a small bowl, combine sugar and cinnamon for sprinkling.

    Scoop batter into muffin pan. Sprinkle with cinnamon sugar.

    If using a 12 muffin tin, add water to the empty spots.

    Bake 25-30 minutes until lightly browned and done.

    Cool in pan 5 minutes. Remove to cooling rack.
