My sister, Carolyn, gave me this recipe. She is all about any muffin that has a streusel topping. These muffins are moist and delicious!

- FOR THE MUFFINS

2 1/2 call purpose flour

2 cwhite sugar
-
1 Tbspcinnamon or pumpkin pie spice

1 tspbaking soda

1/2 tspsalt

2 lgeggs
-
1 tspvanilla extract
-
1 cpumpkin puree
-
1/2 cvegetable oil
-
2 cfinely chopped or grated apple (peeled)
- FOR THE STREUSEL TOPPING
-
1/4 cbrown sugar, firmly packed
-
2 Tbspall purpose flour
-
1/2 tspcinnamon
-
4 Tbspcold butter cut up
How To Make carolyn's pumpkin apple muffins

1Mix the dry ingredients together and set aside. Combine the eggs, vanilla, pumpkin, vegetable oil and chopped apple until well mixed. Gradually add the dry ingredients until well combined but don't overmix.

2Divide batter between 18 muffin tins lined with muffin papers or VERY well greased.

3For the topping, work all ingredients together until it forms a coarse meal texture. Sprinkle a teaspoon or two over each muffin until it is all used up.

4Bake at 350 degrees for 25 to 30 minutes.
