Ingredients For cappucino muffins

2 csifted all purpose flour

1 Tbspbaking powder

1 tspbaking soda

1/2 cunsweetened cocoa powder

2 Tbspdarkly roasted ground coffee (i use arabica or columbian roasts)

1/2 tspsalt
-
1/2 csemi sweet chocolate chips
-
1 cfinely chopped hazelnuts or almonds

1 tsporange zest, minced
-
1/2 cbutter, softened
-
1/2 csugar
-
1 csour cream
-
3/4 cwhole milk
-
2eggs
-
1/4 cespresso, or 2x strength brewed coffee, cooled (directions below)

paper muffin cup liners
- SWEET FROTHY TOPPING:

1/2 stickbutter
-
2 cpowdered sugar
-
1 tspvanilla
-
2 Tbspmilk
- FOR EXTRA STRENGTH COFFEE:
- BREW COFFEE AT A RATIO OF ONE CUP COFFEE GROUNDS TO 16 OZ WATER
How To Make cappucino muffins

1Preheat oven to 375 F. Sift flour and mix with the dry ingredients including cocoa, chocolate chips, and orange zest. Set aside.

2Mix together the butter, sugars, sour cream, milk, eggs and coffee. Fold into dry ingredients, just until moistened and smooth. Be careful not to overmix. Place liners in 12 muffin cups and bake approximately 20-25 minutes.

3TOPPING: Whip the butter. Add sugar, vanilla and milk. Mix together until well blended into a smooth icing. Smooth glaze over the top of cooled muffins.
