Ingredients For cappuccino muffins

  • 1 c
    milk
  • 2 Tbsp
    instant coffee granules
  • 1/2 c
    butter
  • 1
    egg
  • 1 tsp
    vanilla extract
  • 3 c
    all purpose flour
  • 3/4 c
    sugar
  • 2 1/2 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 3/4 c
    chocolate chips, mini
  • ESPRESSO SPREAD:
  • 4 oz
    cream cheese
  • 1 Tbsp
    sugar
  • 1/2 tsp
    instant coffee granules
  • 1/2 tsp
    vanilla extract
  • 1/4 c
    mini chocolate chips, (optional)

How To Make cappuccino muffins

  • 1
    dissolve coffee granules in milk. cream together butter, egg and vanilla. add coffee and milk mixture.

    mix well then add dry ingredients. fold in chocolate chips. fill greased pan or paper lined muffin cups 2/3 full.

    bake at 375 for 17-20 minutes or until muffins test done. cool for 5 minutes before remaining from pans to wire racks. serve with espesso spread.
