Ingredients For burst of lemon muffins

  • 1 1/3 c
    flour
  • 3/4 c
    sugar
  • 1 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 c
    (8oz) lemon or vanilla yogart
  • 1 lg
    egg
  • 1/3 c
    butter or margarine,melted
  • 1-2 Tbsp
    lemon juice
  • 1/2 c
    coconut
  • TOPPING:
  • 1/3 c
    lemon juice
  • 1/4 c
    sugar
  • 1/4 c
    flaked coconut..toasted

How To Make burst of lemon muffins

  • 1
    In a large bowl,combine,1st 5 ingredients. In another bowl,beat next 5 ingredients until smooth. Stir into dry ingredients,just until moistened. Fold in coconut.

    Fill greased cups 2/3 full. Bake 18-20 minutes or until golden brown and muffins test done. Cool 5 minutes--remove to wire rack

    TOPPING: In a saucepan combine lemon juice & sugar. Cook & stir until sugar is dissolved. Stir in coconut. Using a toothpick,poke 6-8 holes in each muffin. Spoon Coconut mixture over muffins. Serve warm or cool to room temperature.
