Ingredients For burst of lemon muffins

1 1/3 cflour
-
3/4 csugar
-
1 tspbaking powder
-
3/4 tspbaking soda

1/4 tspsalt
-
1 c(8oz) lemon or vanilla yogart

1 lgegg
-
1/3 cbutter or margarine,melted

1-2 Tbsplemon juice
-
1/2 ccoconut
- TOPPING:
-
1/3 clemon juice
-
1/4 csugar
-
1/4 cflaked coconut..toasted
How To Make burst of lemon muffins

1In a large bowl,combine,1st 5 ingredients. In another bowl,beat next 5 ingredients until smooth. Stir into dry ingredients,just until moistened. Fold in coconut.

2Fill greased cups 2/3 full. Bake 18-20 minutes or until golden brown and muffins test done. Cool 5 minutes--remove to wire rack

3TOPPING: In a saucepan combine lemon juice & sugar. Cook & stir until sugar is dissolved. Stir in coconut. Using a toothpick,poke 6-8 holes in each muffin. Spoon Coconut mixture over muffins. Serve warm or cool to room temperature.
