bran muffins

I have had this recipe for over 40 years and loved it when I first found it. I moved several times and thought I had lost it. A few years ago, I found it again and it took some time to find the ingredients, but I did. When I bit into it for the first time today, it took me back to the first time I tried it over 40 years ago. It was a good memory.

Ingredients For bran muffins

  • 1 c
    boiling water
  • 2 c
    100% bran
  • 1 c
    40% bran flakes
  • 3/4 c
    sugar
  • 1/2 c
    oil
  • 2
    eggs
  • 2 1/2 c
    all- purpose flour
  • 2 1/2 tsp
    baking soda
  • 3/4 tsp
    salt
  • 2 c
    buttermilk

How To Make bran muffins

  • 1
    Pour water over bran and flakes, and cool.

    Cream sugar, oil and eggs. Stir into bran mixture. Add the rest of the ingredients and mix well.

    Grease muffin pan and add muffin mixture to pan. Bake at 400 degrees F for 15-20 minutes.
