I got this recipe from a friend, so I can't take the credit for it, but it's a very quick and easy recipe and very yummy with that morning cup of coffee. Try it and enjoy!

Ingredients For blueberry muffins

3/4 cmilk

1/4 clemon juice

2 call purpose flour

3/4 csugar

1 Tbspbaking powder

1/2 tspground cinnamon

1/2 tspsalt

1egg
-
1/4 cvegetable oil

1 cfresh or frozen blueberries
How To Make blueberry muffins

1In a small bowl: mix milk and lemon juice, set aside

2In a large bowl: combine flour, sugar, baking powder, cinnamon,and salt.

3Add egg (lightly beaten) and oil to the milk mixture; mix well, then add this to the flour mixture just until moistened (it will be thick). Fold in blueberries. (Recipe calls for 1 cup, but I always add more.)

4Fill greased or paper-lined muffin cups two thirds full. Bake at 400 degrees F at 25 minutes or until center bounces back when lightly touched.
