blueberry muffins

Got this recipe from a cookbook that was put together as a fundraiser when my daughter was a cheerleader in high school(2003). I made them for the Crew my husband works with & everyone seemed to like them. (Including my 19 month old Grandson, lol.)

Ingredients For blueberry muffins

1/4 cbutter (softened)

1 csugar
-
1egg
-
3/4 cmilk

1/4 tspvanilla

1 3/4 cplus 1 tbs flour, divided

2 1/2 tspbaking powder

1/2 tspsalt
-
1 cblueberries (fresh or frozen)
How To Make blueberry muffins

1Pre heat oven to 425°.

2Cream butter and sugar until well blended. Should be light & fluffy.

3Beat in egg, milk and vanilla until nearly smooth.

4In a small bowl, stir 1 3/4 c flour, baking powder and salt.

5Add to Sugar & Milk mixture until all dry ingredients are moistened (will be a little lumpy)

6Lightly toss blueberries with remaining flour & gently fold into batter.

7Spoon ( I use an Ice Cream Scoop) into prepared muffin pans (I use bakers Joy).

8Bake 25 minutes until Golden Brown.
