1/4 tspsalt

1 stickunsalted butter melted and cooled

1/2 cwhole milk

3/4 cgranulated sugar

1/4 clight brown sugar

1 tspfinely grated lemon zest

2 lgeggs

1 1/2 cblueberries
- BANANA BUTTER:

6 Tbspunsalted butter at room temperature

1very ripe banana sliced
-
1/2 tsplemon juice
-
pinch of kosher salt
How To Make bluebarry muffins w banana butter for mother's day

1Preheat oven to 375 degrees and fill 12 muffin cups with paper liners.

2In a large bowl, whisk the flour and the baking powder, and salt in a medium bowl. whisk the butter with both sugars, lemon zest, and eggs

3Add the wet ingredients to the dry ingredients and whisk just until combined. Fold in the blueberries.

4Spoon the batter into the muffins cups and bake for 20 to 25 minutes until the muffins are golden brown. Let cool 5 minutes. Unmold and let cool on rack.

5TO MAKE BANANA BUTTER;

6In a food processor puree the butter, banana, lemon juice, and salt serve with the muffins.

7The muffins can be made ahead of time and stored for up to 2 days. The butter can be refrigerated for up to a week.
