With two youngins playing high school and middle school sports, I end up making a lot of meals that can be easily taken and eaten at the games, in the bleachers. Came up with this one cause I wanted burgers, but that was too much to fix for tonight. Actually made enough for the entire field hockey team to try and they loved them.

Ingredients For bleacher burgers

  • 2
    eggs
  • 3 c
    bisquick
  • 1 c
    milk
  • 3 Tbsp
    canola oil
  • 4 slice
    american cheese
  • 1/2 lb
    ground beef
  • 1/4 c
    chopped onion (optional)

How To Make bleacher burgers

    Brown ground beef with seasoning that you would use for your hamburgers. Drain and set aside.

    Heat oven to 400˚F. Spray regular size, 12 muffin pan with cooking spray.

    In a meduim mixing bowl, slightly beat eggs with a fork, then add Bisquick, milk and oil. With the cheese, pinch off finger tip size pieces and drop into the mixture. Mix until there is no more dry mixture, then mix in the ground beef and onions(optional).

    Pour into greased muffin pan and bake 18 to 20 minutes. Toss into a tea towel, and place into a container that will let the steam out so that they will not be soggy by the time you get to your game. Or serve warm at home.

    Try with other types of cheese using 1 cup measurement for shredded or crumbled cheeses
