betty's lunchbox pizza bread/muffins
A sandwich alternative for lunchboxes. Loaded with pizza favourites this is always a hit with my 4 children and husband. My boys take two to school in lieu of 2 sandwiches. These are good for 2 days and can be frozen and popped into a lunch box frozen and will thaw by lunch time. I normally make a double or triple batch to last the week. Meat can be swapped for other meats such as pepperoni, broken up meatballs, bacon etc. Vegetarian option - forgo meats and add chopped pizza veggies (mushrooms, peppers, onions etc - they are best sauted first in my opinion) use 1 cup in total.

Ingredients For betty's lunchbox pizza bread/muffins

1cup self raising flour or use 2 cups of self raising flour and forget the next 3 ingredients

1cup wholemeal (whole wheat) flour

1teaspoon baking powder

1teaspoon bicarb soda

1cups milk, at room temp. (minus a tablespoon for making bread)

1egg, at room temp

1teaspoon garlic
-
1teaspoon dried onion flakes

2teaspoons italian herbs (or 1 teaspoon basil and 1 teaspoon oregano)

1/2cup bottled pasta sauce

1/2cup chopped salami
-
1/2cup chopped ham
-
1/4cup, chopped olives
-
1/2cup grated cheese
-
2tablespoons dried parmesan cheese

2tablespoons vegetable oil
-
1/2teaspoon pepper
-
2teaspoons oregano, extra for topping

1/4cup grated cheese, extra for topping
How To Make betty's lunchbox pizza bread/muffins

1Pre-heat oven to 360oF (170oC) and line a 12 hole jumbo muffin tray. Set aside to be needed.

2Mix milk, egg, pasta sauce, garlic and oil until combined in a bowl or measuring jug.

3In a large bowl add everything else and make a well. Pour in the wet ingredients and mix/fold until JUST combined.

4Place spoonfuls of batter into the prepared liners and sprinkle tops with extra cheese and oregano.

5Bake in prepared oven for about 20 - 25 minutes.

6Can be baked into 2 loaves to make pizza bread.
