Our two year old grandson, Johnny, is such a joy to spend time with. My husband and I have so much fun watching him discover new things...like picking and eating blueberries for the first time. He likes to help me stir up good things to eat. So I'm happy when together we can enjoy really healthy foods like fresh blueberry muffins. Note: The coconut oil in this recipe imparts a really delicious taste.

Ingredients For best-ever blueberry muffins

1 3/4 cunbleached white flour

1/4 csugar
-
1 Tbspbaking powder

1/2 tspsalt
-
1egg, beaten
-
1 cmilk
-
1/3 ccoconut oil
-
1 cfresh or frozen blueberries
How To Make best-ever blueberry muffins

1Sift dry ingredients into a bowl; make a well in the center.

2Combine egg, milk, and coconut oil. Add all at once to dry ingredients. Stir just until dry ingredients are moistened.

3Gently stir in 1 cup fresh or thawed and well-drained frozen blueberries.

4Filled greased muffin pans 2/3 full. Bake at 400 degrees for about 25 minutes. Note: To make cleanup easier you can line your muffin pans with paper bake cups.
