  • 1 c
    all-purpose flour
  • 1/2 c
    whole wheat flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 3 lg
    ripe bananas, mashed
  • 3/4 c
    sugar
  • 1 lg
    egg, lightly beaten
  • 1/3 c
    melted butter
  • 1/3 c
    packed, light brown sugar
  • 2 Tbsp
    flour
  • 1/8 tsp
    cinnamon
  • 1 Tbsp
    butter

How To Make basic banana muffins w/ crumb topping

  • 1
    Heat oven to 375. Spray 10 muffin cups w/ cooking spray. In lg bowl, mix together flours, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir banana mix into flour mix until just moistened. Spoon batter into muffin cups, 1/2 full. In small bowl, mix together brown sugar, flour, and cinnamon. Cut in butter until crumbly. Top each muffin cup w/ mix. Bake 18-20 min, or until a toothpick inseerted in center comes out clean.
