This is modified from a few recipes in a well-known cookbook. For an extra sweet crunch, add your favorite struessel topping before baking.

Ingredients For banana oat muffins

2/3 call purpose flour

2/3 cwheat flour

3/4 coats, regular

1/3 csugar

1/2 cchopped nuts (i use pecans or almonds)

2 tspbaking powder

1/4 tspsalt

1/2 tspcinnamon

1/2 cmilk
-
1egg, beaten

1/4 ccooking oil
-
3/4 cbananas, mashed (1-2 bananas)
How To Make banana oat muffins

1Grease 12 muffin cups (don't use paper liners). Sometimes it makes less than 12, FYI.

2Combine dry ingredients (flour, sugar, oats, baking powder, salt, cinnamon, and nuts) in a large bowl. Make a well in the middle. Set aside.

3In a separate bowl, combine milk, egg, oil, and banana. Add all at once to dry ingredients. Mix just until moistened. Spoon into prepared muffin cups. OPTIONAL - sprinkle with cinnamon sugar.

4Bake at 400 degrees for 18-20 minutes. Cool in pan on wire rack for 5 minutes. Remove from cups and ENJOY!

5Different option: I made them with only white-whole-wheat flour, substituted chocolate chips for the chopped nuts, and left off the cinn/sugar topping. I enjoyed them :)
