A wonderful homemade muffin to start the day. Dense and moist, the muffin is filled with wonderful banana flavor. We love the bits of tart cranberries throughout. On top is a sweet and crunchy streusel. Perfect with a cup of coffee or tea.

1/2 tspbaking soda

3/4 clight brown sugar, packed

1/4 tspground cinnamon

4-5ripe bananas, smashed

1/2 cdried cranberries

1/2 cvegetable or canola oil

1/2 cbuttermillk
-
2 lgeggs
-
1/2 tspsalt
-
1/2 tspvanilla extract

1/4 tspalmond extract
-
1/3 cgranola cereal - your favorite
- STREUSEL TOPPING FOR MUFFINS

1/2 call-purpose flour

1/2 cwhite sugar
-
1/4 cbutter
-
1 tspground cinnamon
How To Make banana cranberry crunch breakfast muffins

1Preheat the oven to 375 degrees F. In a large bowl, mix together flour, baking soda, brown sugar and cinnamon with a whisk. Set aside.

2In a separate large bowl, mix together smashed bananas, cranberries, oil, buttermilk, eggs, salt, vanilla extract, and almond extract. Mix well. Then add granola.

3Make a well in the center of the dry ingredients and mix the buttermilk/banana mixture into it until well blended.

4Grease muffin cups or line each cup with a paper liner. Place batter in each cup to a level of 3/4 full.

5Mix together streusel ingredients. Divide the streusel mixture evenly over the top of each muffin.

6Bake for 25 minutes until a toothpick comes out clean.
