We can't think of a better way to start the day than with these banana coffee muffins. These muffins are similar to banana bread. They're moist, soft, sweet, and filled with banana flavor. We love the slight coffee flavor in them. Walnuts add a nice crunch. Grab one and enjoy them on the go or warm at home and enjoy with a cup of coffee.

1/3 cbutter, melted

3/4 cgranulated sugar

1 pinchsalt

1 1/2 call-purpose flour

1 cwalnuts, chopped

1muffin pan

1 pkgmuffin/cupcake wrapper
How To Make banana coffee muffins "breakfast perfection"

1Preheat oven to 350 degrees. Mash bananas (3-4) in a large bowl.

2Melt the butter (1/3 cup) and mix into the bowl of bananas with a large wooden spoon.

3Beat the 1 egg.

4Mix egg, sugar (3/4 cup), coffee (3 Tbsp), and vanilla in a mixing bowl and stir.

5Mix in baking soda (1 tsp) and a pinch of salt. Keep on stirring. Add flour (1 1/2 cups).

6Add banana mixture.

7Fold in walnuts (1 cup).

8Insert muffin wrappers into the muffin pan. Pour mixture into muffins pan. Fill each only halfway.

9Bake for 25-30 minutes. Check the middle with a toothpick to see if baked.
