We can't think of a better way to start the day than with these banana coffee muffins. These muffins are similar to banana bread. They're moist, soft, sweet, and filled with banana flavor. We love the slight coffee flavor in them. Walnuts add a nice crunch. Grab one and enjoy them on the go or warm at home and enjoy with a cup of coffee.

  • 1/3 c
    butter, melted
  • 3/4 c
    granulated sugar

    egg, beaten
  • 1 tsp
    vanilla extract

    espresso/coffee
  • 1 tsp
    baking soda
  • 1 pinch
    salt
  • 1 1/2 c
    all-purpose flour
  • 1 c
    walnuts, chopped

    muffin pan
  • 1 pkg
    muffin/cupcake wrapper

How To Make banana coffee muffins "breakfast perfection"

  • Mashed bananas in a large bowl.

    Preheat oven to 350 degrees. Mash bananas (3-4) in a large bowl.
  • Stirring in melted butter.

    Melt the butter (1/3 cup) and mix into the bowl of bananas with a large wooden spoon.
  • Whisking an egg.

    Beat the 1 egg.
  • Egg, sugar, coffee, and extract in a bowl.

    Mix egg, sugar (3/4 cup), coffee (3 Tbsp), and vanilla in a mixing bowl and stir.
  • Flour and baking soda added.

    Mix in baking soda (1 tsp) and a pinch of salt. Keep on stirring. Add flour (1 1/2 cups).
  • Stirring in banana mixture.

  • Folding in nuts.

    Fold in walnuts (1 cup).
  • Batter added to muffin tin.

    Insert muffin wrappers into the muffin pan. Pour mixture into muffins pan. Fill each only halfway.
