So a loaf of banana bread was not at all appealing. But I made a recipe making banana bread muffins? Who da thunk? They came out sooo yummy.

Ingredients For banana bread muffins

2 1/2 cwhole wheat flour

1/2 tspbaking soda

3/4 cdark brown sugar packed

1/4 tspcinnamon

4ripe bananas smashed (2 cups)

1/2 cvegetable oil
-
1/2 cmilk
-
2large eggs
-
1/8 tspsalt
-
1/2 tspvanilla extract
-
3/4 cwalnuts (optional)
How To Make banana bread muffins

1Preheat oven to 425 degrees. Spray muffin pan with non stick cooking spray. Combine flour, soda, brown sugar, and cinnamon in a medium bowl. Set aside.

2Smash bananas in a bowl or 4 cup measuring cup. Whisk together bananas, oil, milk, eggs, salt, and vanilla.

3Make a well in the center of the dry ingredients. Pour in wet ingredients and lightly mix. Until lumpy. Do not overmix or muffins will be heavy and dense. Add nuts at this time if you want.

4Using half cup measuring cup, put muffin mix in muffin pan. Divide accordingly. Once you are ready to bake, place in oven and lower oven temp to 375 degrees. Bake for twenty minutes or until toothpick inserted in center of muffin comes out clean.
