bacon-cheese muffins

This is a breakfast muffin I have been cooking for my family for years. Even though my kids are grown they still think this is a special treat when I cook them. I have double the recipe now so everyone will have more than one. Really great with a cup of coffee or hot chocolate on a cold morning.

Ingredients For bacon-cheese muffins

  • 1 3/4 c
    self rising flour
  • 1/4 c
    sugar
  • 1/3 c
    margarine
  • 1/2 c
    shredded cheddar cheese
  • 1/3 c
    cooked bacon, crumbled
  • 1
    egg
  • 3/4 c
    milk

How To Make bacon-cheese muffins

  • 1
    Mix flour and sugar. Cut in margarine until resembles coarse meal. Mix in cheese and bacon. Beat egg and milk together, add to dry ingredients. Fill muffin cups about 3/4 full. Bake at 400 degrees for 15-20 minutes.
