I saw this recipe on the Taste of Home Website. It's terrific, but I like to add some vanilla extract.

Ingredients For apple spice muffins

  • 2 c
    all purpose flour
  • 1 c
    granola without raisins
  • 2/3 c
    granulated sugar
  • 3 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 tsp
    cinnamon, ground
  • 1/4 tsp
    nutmeg, ground
  • 2
    eggs
  • 2/3 c
    apple juice, unsweetened
  • 1/4 c
    canola oil
  • 1 tsp
    real vanilla
  • 1 1/2 c
    apples, peeled, grated

How To Make apple spice muffins

  • 1
    In a large bowl, combine the first seven ingredients. In another bowl, whisk the eggs, apple juice, vanilla and oil.

    Stir wet ingredients into the dry ingredients just until moistened. Fold in the apples.

    Fill greased or paper lined muffin cups 3/4 full. Bake at 400 degrees for 18-20 minutes or until a toothpick inserted into the middle comes out clean. Cool for 5 minutes before removing from the pan to cool on a wire rack. Serve warm
