apple-raisin morning muffins

This has always been a family favorite. My grandmother used to bake them for my mother and her siblings. My mother carried on the tradition and shared these yummy muffins with my siblings and I. I enjoy baking them early in the morning when the sun is shinning in my kitchen and I am sipping on coffee. Breakfast is never bad when these muffins are served!

1 1/2 call-purpose flour

1/2 cwhole wheat flour

1 1/4 cwhite sugar

1 Tbspground cinnamon

2 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt

2 cgrated carrots

1 mdapple- peeled, cored, and chopped

1 craisins

1 lgegg

2egg whites

1/2 capple butter

1/4 cvegetable oil

1 Tbspvanilla extract

2 Tbspchopped walnuts

2 Tbsptoasted wheat germ
How To Make apple-raisin morning muffins

1Preheat oven to 375 degrees F. Lightly oil 18 muffin cups, or coat with nonstick cooking spray.

2In a medium bowl, whisk together eggs, egg whites, apple butter, oil, and vanilla.

3In a small bowl, combine walnuts and wheat germ; sprinkle over each muffin top.

4Place muffin pan in oven and bake at 375 degrees F for 15-20 minutes, or until the tops are golden brown and spring back when lightly pressed.
