I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

What could be better than waking up on a fall morning to the smell of apple pie muffins? Super moist, the muffins are buttery with chunks of apple inside. On top is a delicious cinnamon-spiced crumble. They kind of taste like apple strudel. Yum!

Ingredients For apple pie muffins
- CRUMB TOPPING

1/2 cbrown sugar, firmly packed

1/3 call-purpose flour
-
1/4 cunsalted butter, softened

1 tspcinnamon
- MUFFINS

1 1/2 cbrown sugar, firmly packed
-
2/3 ccanola oil (can use vegetable oil)

1 lgegg
-
1 1/2 tspvanilla extract
-
1 tspcinnamon
-
2 1/2 call-purpose flour
-
1 tspbaking soda
-
1/4 tspsalt
-
1 cbuttermilk
-
3 cpeeled and diced firm tart apples (I use granny smith)
How To Make apple pie muffins

1Topping: In a small bowl, toss together sugar, flour, butter, and cinnamon until crumbly; set aside.

2Muffins: In a large bowl, whisk together brown sugar, oil, egg, cinnamon, and vanilla until smooth.

3In a separate bowl, sift together flour, soda, and salt.

4Stir flour into the oil mixture alternately with buttermilk.

5Add until completely incorporated.

6Fold in apples, mixing just until combined.

7Spoon into greased muffin cups filling 3/4 full.

8Sprinkle topping over evenly.

9Bake at 350 F for 25-30 mins or until golden brown and tops spring back.
