I believe this came out of a past issue of the King Arthur Flour Baker's Catalogue. The Domino Sugar advertisement had this in their ad. I could eat the whole muffin tin full, well, almost! These are really wonderful and oh so delicious! You have to try these.

Ingredients For apple nut muffins

1egg

2/3 capple juice or milk

1/2 cvegetable oil

1 tspvanilla extract

2 call purpose flour
-
1/4 cgranulated sugar

1/4 cbrown sugar, light and firmly packed

1 Tbspbaking powder

1/2 tspsalt
-
1/2 cchopped nuts
-
1apple, chopped
-
domino sugar and cinnamon
How To Make apple nut muffins

1Grease 12 medium muffin cups or line with paper baking cups.

2In bowl, beat egg with juice, oil and vanilla. Stir in flour, sugars, baking powder, and salt just until flour is moistened. (batter will be lumpy). Stir in nuts and apple. Fill prepared muffin cups, sprinkle with sugar and cinnamon.

3Bake at 400 degrees F about 20 minutes or until golden brown. Immediately remove from pan.
