Did you ever buy something by mistake? The pancake mix I purchased is the brand I prefer, but I picked up the WHOLE WHEAT BLEND BY MISTAKE...Well, my hubby won't try new things, but I DO! This morning I was cravin a hot muffin with my coffee. Since I like to bake - even before I start other things, "I whipped out the mix, the flour and whatever else grabbed me!"

Ingredients For apple muffins with whole wheat blend

1 caunt jemima whole wheat blend pancake mix

1 call-purpose flour

1/3 clight brown sugar (adjust to suit your taste)

2 tspbaking powder
-
1 cbuttermilk
-
1/3 csafflower oil (picture shows wrong oil used)

1 lgfresh egg
-
1 tspvanilla extract
-
1small individual container of applesauce
-
1apple, cored,peeled and chopped

1 tspcinnamon
-
2 Tbspgood granola, approx. for sprinkling on tops of muffins before baking
How To Make apple muffins with whole wheat blend

1Place muffins cups in a muffin pan (12 medium) and preheat oven to 400 degrees.

2Measure all dry ingredients and place in large mixing bowl.

3Add all liquid ingredients and mix slowly at first, then blend in well.

4Spoon batter into muffin cups and sprinkle granola on top of each.

5Bake in middle of oven for 17-18 mins. checking to be sure they are golden brown and dry to the touch.

6Cool on a rack for a minute or more before you try one!
