Ingredients For apple cranberry muffins

1-3/4 cplus 2 tbsp. flour

1/2 csugar

1-1/2 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt

1egg

3/4 cmilk

3/4 csweetened applesauce

1/4 cbutter, melted

1 cfresh cranberries, coarsely chopped

1/2 tspcinnamon
How To Make apple cranberry muffins

1In a medium bowl, combine 1-3/4 cups of the flour, 1/4 cup of the sugar, baking powder, baking soda and salt. In a small bowl, combine egg, milk, applesauce and butter; mix well.

2Add egg mixture to flour mixture; stir until just moistened. Batter will be lumpy; do not overmix.

3In small bowl, toss cranberries with remaining 2 tbsp. sugar; fold into batter.

4Spoon batter evenly into 12 greased 2-3/4 inch muffin cups.

5In measuring cup, combine remaining 1/4 cup of sugar and the cinnamon. Sprinkle over tops of muffins.

6Bake at 400 degrees for 20 to 25 minutes until golden brown. Cool on wire rack.
