Ingredients For apple coconut muffins

1 1/2 call purpose flour

1/2 cbrown sugar, lightly packed

1 Tbspbaking powder

1 tspbaking soda

1/2 tspsalt
-
1/4 tspcinnamon
-
1/4 tspnutmeg
-
2 cgrated apple
-
2 lgeggs, lightly beaten

1/3 coil of your choice
-
1/2 cwalnut pieces
-
3/4 csweetened shredded or flaked coconut
- FOR TOPPING

2 Tbspmargarine

1/3 csweetened shredded coconut

3 Tbsplight brown sugar
How To Make apple coconut muffins

1preheat oven to 350.grease muffin pan and set aside. combine topping ingredients in a small bowl. stir and set aside.

2in large bowl, mix together flour, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

3in another large bowl, mix together grated apple, eggs, oil and walnuts. add apple mixture to flour mixture all at once, stirring just enough to almost moisten dry ingredients. add coconut, and stir to incorporated.

4divide batter among muffin cups. combine topping ingredients and drop crumbles of topping over batter. bake for 15-20 minutes for regular sized muffins or 20-25 minutes for large or until tops spring back when lightly pressed and wooded skewer inserted in center of muffin come out clean.

5cool pan on wire rack 10 minutes, then turn muffins out and cool on rack until desired temperature. i like mine a little warm.
