My mother was born in Haworth, Oklahoma in 1929. This is one of her recipes that she grew up on. Flapjacks are a little heavier than pancakes. I love these because they get crispy around the edges.

Ingredients For oklahoma flapjacks

1 call purpose flour

1 tspbaking powder, heaping

1 dashsalt

sweet milk, enough to mix & pour well (not too thin)

4-6 tspshortening (for frying)
How To Make oklahoma flapjacks

1Heat non stick skillet with 1 teaspoon shortening. Allow shortening to melt.

2Pour batter for 1 small to medium sized flapjack into Hot skillet. (For larger flapjacks use a little more shortening) Fry on medium heat until golden brown on both sides. Repeat with remaining batter.

3Eat while hot with butter and syrup or jelly. Good plain with just butter, too.
