I made this last night out of leftover mashed potatoes, it turned out to be very tasty.

    self-rising buttermilk corn meal
  • 1 c
    all-purpose flour
  • 1/4 c
    oil/meat drippings
  • 2 lg
    eggs
  • 1 1/2 c
    mashed potatoes, leftover
  • 1/2 c
    chopped onion
  • 2 c
    milk
  • cooking oil for frying in a shallow skillet

How To Make leftover mashed potato cornbread

  • Ingredients mixed in a bowl.

    In a large bowl, mix all ingredients together.
  • Spoonfuls of batter in a skillet with oil.

    Spoon into a shallow skillet of cooking oil.
  • Frying both sides of the mashed potato cornbread.
