A FAMILY FRIEND WHO WAS OF NORWEGIAN DESCENT, FIXED THESE FOR CHRISTMAS DINNER AND I WAS HOOKED ON THEM EVER SINCE...WE LOVE THEM, THEY LOOK LIKE A CREPE IN A WAY, VERY GOOD...WE ALWAYS MADE THESE DURING THANKSGIVING AND CHRISTMAS...AND NEW YEARS....

Ingredients For lefsa (norwegian flat bread )

    mashed potatoes, can use instant
  • 1/2 c
    butter or lard
  • 1/2 tsp
    salt
  • 1 tsp
    baking powder
  • 1 Tbsp
    sugar
  • 2 c
    all-purpose flour

    BE SURE TO LET THE POTATOES COOL DOWN SOME BEFORE MIXING THE REST OF THE INGREDIENTS, YOU DON'T WANT TO END UP WITH A GLUE-LIKE MIXTURE... MIX THE POTATOES, SUGAR, SALT , BAKING POWDER, AND BUTTER OR LARD ALL TOGETHER WELL....

    ADD: THE 2 CUPS FLOUR, (ADDING MORE IF NECESSARY, BUT TRY NOT TO USE TOO MUCH AS IT WILL MAKE THEM TOUGH)... PUT OUT ONTO FLOURED COUNTER, AND PINCH OFF A SMALL PORTION AND ROLL OUT INTO ROUNDS, (ABOUT THE SIZE OF TORTILLAS, YOU CAN MAKE THEM BIG OR SMALL)... IF THE DOUGH ROLLS OUT EASY, THEN YOU HAVE THE RIGHT CONSISTENCY.

    THE DOUGH SHOULD BE ROLLED OUT VERY THIN... BROWN LIGHTLY ON BOTH SIDES IN A "UNGREASED" FRY PAN...THEY WILL HAVE LITTLE BROWN MARKS ON BOTH SIDES, MUCH LIKE A CREPE...

    HEAT SHOULD BE HOT....COVER LEFSE WITH CLOTH TO KEEP SOFT.... SPREAD WITH BUTTER, AND SERVE WARM....THESE ARE SO DELICIOUS....YOU CAN SPRINKLE CINNAMON AND SUGAR ON THESE AS WELL, BUT I PREFER MINE WITH JUST BUTTER.... OH, AFTER YOU PUT BUTTER, AND/OR CINNAMON ON THESE, YOU JUST FOLD THEM UP OR ROLL INTO BURRITO SHAPE AND ENJOY EACH YUMMY BITE... I HOPE YOU ENJOY THESE AS MUCH AS WE DO...
