How To Make italian herb & sun-dried tomato focaccia
-
1Dissolve 1 Tbsp of yeast in 1 1/2 cups of warm water. Oil a 9x13 baking pan liberally with olive oil.
-
2Combine all the ingredients except the Parmesan cheese and sun-dried tomatoes in a large bowl.
-
3Add the water and yeast mixture, mixing slowly.
-
4Beat with an electric mixer at high speed or a wooden spoon for 60 seconds. The batter will be sticky.
-
5Scoop batter into the prepared pan and spread evenly. Put a little olive oil on your hands to pat the dough into the pan easier.
-
6Cover with plastic wrap. Let rise at room temperature for 1 hour or until it becomes puffy.
-
7In the last 10-15 minutes that the dough is rising, preheat the oven to 375 degrees F.
-
8Gently poke the dough with your fingers, but do not poke through the dough. Just create small dimples.
-
9Drizzle the dough lightly with olive oil. Sprinkle with shredded Parmesan cheese, sun-dried tomatoes, and any additional dried herbs of your choice (if desired).
-
10Bake the bread until golden brown, about 35 - 40 minutes.
-
11Remove from the oven. Wait 5 minutes and take the focaccia out of the pan. Place it onto a wire rack. Slice and serve warm or at room temperature.
