This is an old Southern Favorite in many homes in the South. Personally I had never made it myself, although I had heard many others speak of it. A friend of my brothers makes this all the time. This is practically the only type of Corn Bread that she makes. Personally my mother always made a large skillet of Corn Bread, to feed our large family. So until this recipe, it was also the only type I had made as well. But this is a Crispy crunchy bread on the outside, soft tender on the inside. It is great with butter slathered on it while it is hot, it is so good, you can even eat it cold.

Ingredients For hot water corn bread

  • 2 c
    yellow corn meal
  • 1 tsp
    sugar
  • 1 c
    boiling water
  • vegetable oil for frying

How To Make hot water corn bread

    Preheat skillet ( I prefer cast Iron)with about 1 inch of cooking oil.MAKE SURE OIL IS VERY HOT BEFORE ADDING BREAD MIXTURE.

    Mix all the dry ingredients into a medium size bowl, then stir to mix.

    Add BOILING hot water, then stir to combine into a thick paste consistency.

    Drop about 2 tablespoons of batter into hot oil, and brown on both sides. DO NOT OVER CROWD SKILLET. CAREFUL OIL SHOULD BE VERY HOT, SO WATCH CAREFULLY.

    Patties will be crispy & crunchy on outer edges. SERVE IMMEDIATELY WHILE STILL HOT. Add butter or margarine if desired.GREAT WITH BEAN SOUP. May also use WHITE corn meal, I just prefer using YELLOW.
