To me, there is only one way to have cornbread and this is it. Most people today will say fried cornbread; however one of my great-aunts always called it Hoe cakes. I was told during "going west" these were fried on the blade of a hoe on an open fire. I don't know if it is true or if she was just pulling my leg!

Ingredients For hoe cakes

3 cups plain white cornmeal

1 cup plain flour

3 tbls. sugar or splenda

1/2 tsp. salt

1tbls. baking powder

1/3 cup of oil

2 whole eggs
-
enough milk to make a batter
How To Make hoe cakes

1Mix all ingredients together well.

2Drop by gravy ladle onto medium hot griddle, greased lightly. A drop of water should dance across the grease.

3Cook until edges look dry and the batter starts to bubble in the center.

4Flip and cook other side.
